A Short Break...

Hello my faithful readers. I am taking the next three weeks off. OK so I actually started early. As soon as my kids start back to school I will come back in full force. I will leave you with a little treat, a sort of bribery to check back the end of July.

Here is one of my families favorites snacks/breakfast treats. It may sound like a strange combination, but it is yummy. Try it and tell me what you think.


Banana Butterscotch Chip Muffins
2 eggs
3 banana, ripened and mashed
2/3 cup sugar
1/3 cup oil
1 ¾ cup flour
2 teaspoons baking powder
¼ teaspoon baking soda
½ teaspoon salt
½-1 cup butterscotch chips (I use ½ bag for doubled recipe…if you use too many chips they stick to the pans…ask me how I know)
Mix flour, baking powder, baking soda, and salt. In another bowl, blend eggs, bananas, sugar, and oil. Mix dry mixture into wet mixture. Add chips. Do NOT over blend or your muffins will be tough. Fill greased or lined muffin tins 2/3 full. Bake at 325 degrees for 20-25 minutes or until toothpick inserted in center comes out clean. If you use mini muffin tins, decrease time to 15 minutes. Makes 12-15 muffins.
